【Tea Knowledge】Understanding the Six Major Types of Chinese Tea and Starting Your Tea-Tasting Journey
There are many types of tea in China, often classified into six categories: green tea, black tea, oolong tea, white tea, yellow tea, and dark tea. Each category has its unique flavor and production process.
Green tea like West Lake Longjing is known for its "green color, rich aroma, sweet taste, and beautiful shape". The production process does not involve fermentation, allowing the natural nutrients of the tea to be retained to the greatest extent. After brewing, the tea soup is clear and green, with a refreshing and lingering aftertaste.
Black tea like Qimen Black Tea is a fully fermented tea. During the fermentation process, complex chemical reactions occur, resulting in a red and bright color of the tea soup, a scent like flowers and honey, and a rich and sweet taste. It is suitable for adding milk or honey for drinking.
Upright tea, also known as green tea, like Anxi Tieguanyin, is a semi-fermented tea, combining the freshness of green tea and the richness of black tea. After brewing, the aroma is rich and long-lasting, the taste is fresh and refreshing, and it has a high degree of reusability, making it a favorite among many tea lovers.
White tea like Bai Mao Yinzen is made with a simple process, without rolling or kneading, only undergoing withering and drying. It retains a large amount of nutrients, and the tea soup is pale yellow and clear, with a sweet and delicate taste, having certain health benefits.
Yellow tea like Junshan Silver Needle has an additional steaming process during the production, resulting in a yellow color of the tea. The tea soup is yellow and bright, with a rich and sweet taste, and a delicate fragrance.
Black tea like Yunnan Pu'er belongs to post-fermentation tea. During storage, it undergoes continuous fermentation, with the taste and aroma gradually changing, having the characteristic of becoming more fragrant with age. The tea soup is red and bright, with a rich and smooth taste, and is deeply loved by old tea enthusiasts.
Whether you are a beginner exploring Chinese tea or a seasoned tea taster, understanding these six types of tea can help you choose the tea that suits your taste better.

【Tasting Techniques】How to Brew a Delicious Chinese Tea?
Tea brewing is an art, and mastering the correct method can bring out the best flavor of the tea. Here are some general brewing techniques that apply to most Chinese teas.
Firstly, control the water temperature. Different types of tea have different requirements for water temperature. Green tea usually needs 80-85℃ water temperature, while too high a temperature will destroy the nutrients and flavor of the tea; black tea and dark tea are suitable for boiling water at 95-100℃ to fully stimulate the aroma and taste of the tea; oolong tea's brewing water temperature is generally between 90-95℃.
Secondly, the amount of tea added. Generally, in a 150ml gaiwan or teapot, the amount of tea added is 3-5 grams, which can be adjusted according to personal taste. Those who prefer a rich taste can add more tea, while those who prefer a light taste can add less.
Then, the brewing time. For the first brewing, green tea takes about 15-30 seconds, black tea and oolong tea about 30-60 seconds, and dark tea can be slightly longer, about 1-2 minutes. The brewing time can be gradually extended to ensure that the flavor of each brewing is evenly released.
In addition, the choice of tea ware is also important. Brewing green tea is suitable for a glass cup, allowing you to appreciate the tea leaves unfolding in the water; black tea and dark tea are suitable for a purple clay pot or gaiwan, which can better retain and stimulate the aroma of the tea; oolong tea is often brewed in a small pot and cup, making it easier to appreciate its unique aroma and taste.
With these techniques, you can brew a fragrant and delicious Chinese tea at home and enjoy the beauty of tea tasting.

【Cultural Stories】The Unbreakable Bond between Tea and Traditional Chinese Festivals

In China, tea is not only a beverage but also an indispensable element in traditional festivals, carrying people's yearning and blessings for a better life.
During the Spring Festival, people will entertain visiting relatives and friends with tea, symbolizing reunion and good luck. Elders will also give young people tea gift boxes, hoping that they will be healthy and have a happy life in the new year.
On the Qingming Festival, people have the custom of sweeping graves and paying respects to ancestors, and they also pick new tea before Qingming. The tea picked before the spring is considered a precious treasure because it is less affected by pests and has tender buds and a fresh taste. People believe that drinking this tea can bring the scent of spring and also expresses their thoughts for their ancestors.
The Mid-Autumn Festival is a day for family reunion, and enjoying the moon and eating mooncakes are essential activities. While the mooncakes have a sweet and greasy taste, pairing them with a fragrant green tea or oolong tea can help relieve the greasiness and make the atmosphere of reunion more pleasant.
The connection between tea and traditional Chinese festivals reflects the profound depth and humanistic care of Chinese tea culture. Every cup of tea carries deep affection and beautiful blessings, becoming a bond that connects family and friendship.
